Prepare the Duck

Score the skin of the duck breast in a diamond pattern without cutting into the meat. Rub salt on both sides and let it sit for 15 minutes.

Cook the Duck

In a skillet, place the duck breast skin-side down over medium heat. Cook for about 6-8 minutes or until the skin is crispy. Flip and cook for another 4-5 minutes. Remove from heat and let it rest before slicing.

Make the Curry Sauce

In a saucepan, combine Panang curry paste and a little coconut milk over medium heat. Stir until fragrant, about 2 minutes. Gradually add the remaining coconut milk and stir well.

Add Flavorings

Stir in fish sauce, sugar, lime leaves, and water. Bring to a simmer and let it cook for another 5 minutes.

Finish the Curry

Add Thai basil leaves to the sauce and simmer for another 2 minutes. Adjust seasoning as necessary.

Serve

Slice the crispy duck and serve it over rice with the Panang curry sauce poured on top.
