Preparation
Make the Filling
In a large mixing bowl, combine the chopped smoked brisket, cooked corn, shredded cheddar cheese, black beans, and diced jalapeno. Mix until well combined.
Assemble the Egg Rolls
Lay an egg roll wrapper on a clean surface with one corner pointing toward you. Place about 2-3 tablespoons of the filling in the center of the wrapper. Fold the bottom corner over the filling, then fold in the sides and roll tightly to seal. Use a bit of water to seal the top corner. Repeat with remaining wrappers and filling.
Fry the Egg Rolls
In a large skillet, heat oil over medium-high heat. Once hot, carefully add the egg rolls in batches, frying until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.
Prepare BBQ Mayo
In a small bowl, mix together equal parts mayonnaise and your favorite BBQ sauce. Adjust to taste.
