Prepare the Ribeye

Season the Angus beef ribeye with salt, black pepper, and garlic powder. Let it sit at room temperature for about 30 minutes.

Soak Hickory Wood Chips

Soak the hickory wood chips in water for at least 30 minutes before smoking.

Cooking the Ribeye

Set Up the Smoker

Preheat your smoker to 225°F (107°C). Add the soaked hickory wood chips to the smoker.

Smoke the Ribeye

Place the seasoned ribeye in the smoker and smoke for about 4-6 hours or until the internal temperature reaches 130°F (54°C) for medium-rare.

Making the Au Jus

Combine Ingredients

In a saucepan, combine beef broth, red wine, and Worcestershire sauce. Bring to a simmer and cook for about 15 minutes.

Creamy Horseradish Sauce

Mix the Sauce

In a bowl, mix together prepared horseradish, sour cream, Dijon mustard, and salt. Refrigerate until ready to serve.

Roasted Garlic Mashed Potatoes

Prepare the Potatoes

Peel and chop the potatoes. Boil in salted water until tender, about 20 minutes.

Drain the potatoes, then add roasted garlic, butter, milk, and salt. Mash until smooth and creamy.
