1. Chill & Inspect
Ensure the Malbec is stored at serving temperature. Malbec from Mendoza is best served slightly below room temperature: about 60–65°F (15–18°C). If the bottle is too warm, chill it in the refrigerator for 20–30 minutes. If it's too cold, let it sit at room temperature for 10–20 minutes.
2. Open the bottle
Use a waiter’s corkscrew to remove the capsule cleanly and extract the cork. Wipe the bottle lip with a clean cloth or paper towel to remove any sediment or cork crumbs.
3. Decant (recommended)
Pour the Malbec into a decanter or large glass pitcher. If the bottle has visible sediment, pour slowly and stop when you see sediment reach the neck. Let the wine sit in the decanter for 30–60 minutes to allow aromas to open and any reductive notes to blow off. For younger Malbecs (under 5–7 years) aim for 30–45 minutes; for more structured bottles give up to 60 minutes.
4. Serve
Pour the wine into appropriate red-wine glasses, filling each to about one-third full (roughly 4–5 oz / 120–150 ml) to allow swirling. Encourage guests to swirl, sniff, then sip to evaluate fruit (blackberry, plum), spice, and minerality typical of Mendoza Malbec.

6. Arrange cheese and meats
Slice the Manchego into thin wedges and arrange on a serving board. Fan out cured meats nearby so guests can combine bites with wine.
7. Prepare bread and peppers
Slice the baguette into 1/2-inch pieces and, if desired, toast lightly. Arrange grilled or roasted red peppers in a small bowl for spooning onto bread with cheese.
8. Serve chocolate
Break dark chocolate into small pieces and place on the board. Dark chocolate (70% cacao) pairs well with the dark fruit and subtle tannins of Malbec—offer small tastes between sips.
