Prepare Pineapple
Peel and core
Place the pineapple on a cutting board. Using a sharp chef's knife, slice off the top and bottom. Stand pineapple upright and slice downward to remove the skin in strips, removing any remaining eyes with the tip of the knife. Cut the pineapple into quarters lengthwise and cut out the tough core from each quarter. Chop the remaining flesh into roughly 1-inch chunks (you should have about 4 cups).
Optional chilling
If you prefer a colder, less diluted juice, chill the pineapple chunks in the refrigerator for 30–60 minutes before juicing, or freeze half the chunks to use as natural ice later.
Extract Juice
Blend
Place the pineapple chunks in a blender. Add the cold water (start with 1 cup; adjust later if needed for consistency) and granulated sugar. Blend on high speed for 45–60 seconds, or until completely smooth and liquid. Taste and add the lime juice and a pinch of salt (if using) to brighten the flavor; blend 5–10 seconds more to incorporate.
Strain (optional)
For a smooth, pulp-free juice: set a fine-mesh sieve or cheesecloth over a large bowl or pitcher. Pour the blended pineapple into the sieve and press with the back of a spoon or use the cheesecloth to squeeze out as much liquid as possible. Reserve the pulp for smoothies or baking. If you prefer pulpy juice, skip straining and pour directly into serving glasses.
Finish & Serve
Adjust sweetness and consistency
Taste the juice. If too sweet, add a little cold water or a squeeze more lime. If not sweet enough, dissolve an additional 1/2–1 tablespoon sugar in a tablespoon of warm water and stir into the juice until dissolved. If the juice is concentrated, dilute with up to 1/2 cup additional cold water to reach desired strength.
Serve
Fill glasses with ice cubes. Pour the pineapple juice over the ice. If using, top each glass with a splash of club soda for a sparkling version and garnish with mint leaves. Serve immediately.
Storage
Transfer any leftover juice to an airtight container and refrigerate for up to 48 hours. Stir before serving; fresh juice may separate. Do not leave at room temperature for more than 2 hours.
