Make pancake batter

In a medium bowl whisk together 1/2 cup flour, 1/2 tsp baking powder, 1 tsp sugar and 1/8 tsp salt. In a separate bowl whisk 1/2 cup milk, 1 egg, 1 tbsp melted butter and 1/4 tsp vanilla (optional). Pour wet into dry and stir gently until just combined; a few small lumps are okay.

Cook pancake

Heat a nonstick skillet or griddle over medium heat and add 1 tbsp butter or oil, swirling to coat. Pour all batter into the pan to make one large kid-size pancake (about 4–5" diameter). Cook until bubbles form on the surface and edges look set, about 2 minutes. Flip with a spatula and cook 1–1.5 minutes more until golden and cooked through. Transfer to plate and keep warm.

French toast alternative - prepare egg wash

If making French toast instead: in a shallow bowl whisk 1 egg, 2 tbsp milk, 1/8 tsp vanilla and 1/8 tsp cinnamon until blended. Heat skillet over medium and add 1 tbsp butter or oil. Dip one slice of bread (both sides) into egg mixture, letting excess drip back into bowl. Place bread in hot skillet and cook 1.5–2 minutes per side until golden. Transfer to plate and keep warm.

Serve pancake or French toast

Top pancake or French toast with 2 tbsp maple syrup or fresh fruit. Keep warm while preparing bacon and egg so everything can be plated together.

Bacon

Cook bacon while pancake/French toast rests so it stays crisp. For stovetop: place 1 bacon strip in a small cold skillet and add 1 tbsp water (optional — helps render fat and prevents splatter). Turn heat to medium-low and cook, turning occasionally, until evenly browned and crisp, about 6–8 minutes depending on thickness. Drain on paper towel. For oven: preheat to 400°F (200°C), place strip on a foil-lined baking sheet and bake 8–12 minutes to desired crispness.

Fry the egg (sunny-side up or over-easy)

In a small nonstick skillet heat 1/2 tbsp butter or oil over medium-low. Crack 1 egg into a small bowl to check for shells, then gently slide into skillet. Sprinkle with a pinch of salt (1/16 tsp) and a little pepper if desired. For sunny-side up: cook until whites are set and yolk still runny, about 2–3 minutes. For over-easy: cook until whites mostly set, carefully flip and cook 15–30 seconds more for a runny yolk. Transfer egg to plate.

Assemble kid's breakfast plate

On a small kid-friendly plate place the pancake or French toast, add the cooked bacon strip and place the fried egg beside them. Add a small serving of fruit or extra syrup if desired. Let cool slightly before serving to a child.
