Select or Bake
Choose high-quality freshly baked items or bake following appropriate recipes so you finish with 12 total items: 4 croissants, 2 chocolate croissants, 2 blueberry muffins, 2 cranberry orange scones, and 2 butter danishes. If baking from scratch, ensure items are cooled to warm (not piping hot) before assembling the tray.
Warm and Refresh (if needed)
If items have cooled fully, preheat an oven to 325°F (160°C). Place croissants, chocolate croissants, scones, and danishes on a baking sheet lined with parchment. Tent lightly with foil and warm for 6–8 minutes until just warmed through and slightly crisp on the outside; remove foil for the last 1–2 minutes for flaky crispness. Warm muffins for 3–4 minutes. Do not overheat — pastries should be warm, not hot, to preserve texture.
Finish
Let warmed items rest 2–3 minutes on a wire rack so steam escapes and bottoms stay crisp. If using pre-baked items at room temperature, skip warming and proceed to plating.
To Serve
Portion butter: place approximately 1 tablespoon of room-temperature unsalted butter per bakery piece in small ramekins, butter pats, or a covered butter dish. If providing individually wrapped pats, arrange 12 on the tray.
Arrange preserves and honey: spoon the 6 tablespoons of assorted preserves into two small bowls (3 tbs each) and the honey into one small bowl (6 tbs) or divide as desired for variety. Provide small spoons or spreaders for each bowl.
Assemble the tray: choose a platter roughly 14–18 inches long. Arrange the 12 bakery pieces in an appealing, slightly overlapping pattern: place croissants grouped together, chocolate croissants near muffins, scones opposite danishes for color balance. Leave space in the center or a corner to place butter ramekins and preserve bowls. Tuck small spoons/spreaders beside each bowl.
Garnish and final touches: add optional fresh herb sprigs or edible flowers around the edges for color (use up to 6 small sprigs). Ensure each item has access to butter and preserves. If transporting, cover loosely with clean tea towel or parchment and secure for short transport; keep warm items in an insulated carrier if necessary.
Serve: provide small plates and napkins so guests can take individual items. Recommend guests use the butter and preserves to taste.
