Cook bacon

Place a medium skillet over medium heat and add the bacon slices in a single layer. Cook 3–4 minutes per side, turning occasionally, until browned and crisp to your liking. If bacon browns unevenly, reduce heat to medium-low and continue to cook until crisp. Transfer bacon to a paper towel–lined plate to drain while you prepare the other components.

Bagel & Toasting

Split the plain bagel in half with a knife. Lightly toast both halves in a toaster or under a broiler until golden and slightly crisp (about 1–2 minutes in a toaster or 1–2 minutes per side under a hot broiler). Immediately spread 1 tablespoon of softened butter on each toasted half (split butter between halves) so it melts into the surface.

Eggs & Cheese

Beat eggs

In a small bowl, crack the 2 large eggs and add 1 tablespoon milk or water, 1/4 teaspoon black pepper, and 1/4 teaspoon salt (adjust salt to taste). Whisk until combined and slightly frothy.

Cook eggs

Heat a nonstick skillet over medium-low heat and add 1 teaspoon oil or butter, swirling to coat. Pour the beaten eggs into the pan. Let sit undisturbed for about 10–15 seconds, then gently push the set edges toward the center with a spatula, tilting the pan to let uncooked egg run underneath to form a soft-folded omelet or folded scrambled patty. Cook until eggs are mostly set but still glossy, about 1–2 minutes total. For an intact egg patty, shape into a round using the spatula. If you prefer a fried style, cook 1–2 minutes per side with a lid for even set. When eggs are nearly done, place the 1 oz cheddar cheese on top; cover the pan for 20–30 seconds until cheese melts.

Season the eggs with a small pinch of salt if needed and remove from skillet. Keep warm.

Assembly & Finish

Place the bottom buttered bagel half on a plate. Lay the cheese-topped eggs on the bottom half, then place the cooked bacon slices on top of the eggs. If using, add hot sauce or ketchup (about 1 teaspoon) and sprinkle chopped chives or green onion. Cover with the top bagel half.

Cut the sandwich in half, if desired, and serve immediately while warm.
