Cook bacon

Bring bacon to room temperature

Remove the bacon from the refrigerator and lay the slices flat on a plate for 10–15 minutes. This helps them cook more evenly.

Preheat pan

Place a heavy skillet (cast-iron or stainless steel is best) over medium heat. If using very lean bacon or an older pan that sticks, add 1/2 teaspoon neutral oil or butter and let it heat until shimmering but not smoking.

Arrange bacon in pan

Lay the two bacon slices in the cold (or preheated) skillet in a single layer without overlapping. If the slices curl, press them gently with a spatula for the first 30 seconds.

Cook until crisp or to desired doneness

Let the bacon cook on medium heat, turning every 2–3 minutes with tongs so both sides brown evenly. Total cooking time will be about 6–10 minutes depending on thickness and desired crispness. For chewy bacon, cook about 6 minutes; for crisp bacon, 8–10 minutes. If the pan smokes or bacon is browning too fast, reduce heat to medium-low.

Drain and season

When the bacon reaches your desired doneness, transfer the slices to a plate lined with paper towels to drain excess fat. Sprinkle a small pinch of black pepper on top if desired.

Use or serve

Serve the two slices hot as an add-on to a sandwich, salad, burger, or breakfast plate. Alternatively, let cool slightly and chop for use as a topping.
