Cook the sidewinder fries according to package instructions until crisp and golden. For deep-frying: heat oil to 350°F (175°C) and fry in batches 3–4 minutes until crisp. For oven: preheat to 425°F (220°C) and bake on a single layer 18–25 minutes, turning once, until golden. Season immediately with 1 tsp kosher salt and keep warm.

Bacon

While fries cook, cook the bacon. In a skillet over medium heat, cook bacon until crisp, 6–9 minutes, turning as needed. Transfer to a paper-towel-lined plate and drain. When cool, chop into 1/2-inch pieces.

Queso

Make a smooth queso: In a medium saucepan over medium heat, melt 2 tbsp butter. Whisk in 1 tbsp flour and cook 30–45 seconds to make a roux. Gradually whisk in 1 cup whole milk until smooth and slightly thickened, 2–3 minutes.

Lower heat to low. Add shredded American and Monterey Jack cheeses in handfuls, stirring until melted and smooth before adding more. Stir in diced green chiles, 1 tsp cumin, 1 tsp smoked paprika, 1 tsp black pepper and 1 tsp hot sauce if using. Keep queso warm on the lowest heat and stir occasionally; if too thick, thin with up to 2 tbsp additional milk.

House Ayward (Ranch-style) Dressing

Whisk together 1 cup mayonnaise, 1 cup sour cream and 1/2 cup buttermilk until smooth. Stir in minced chives, parsley, 1 tsp dried dill, 1/2 tsp garlic powder, 1/2 tsp onion powder, 1/2 tsp kosher salt, 1/4 tsp black pepper and 1 tsp lemon juice. Taste and adjust seasoning; chill until ready to serve. The dressing should be pourable but thick—add more buttermilk 1 tsp at a time to thin if desired.

Pico de Gallo

Combine the diced tomatoes, 1/4 cup diced yellow onion, chopped cilantro, minced jalapeño (if using), 1 tbsp lime juice and 1/2 tsp kosher salt in a bowl. Stir gently and let sit 10–15 minutes to meld flavors. Taste and adjust salt or lime.

Tortilla Chips & Salsa

Place tortilla chips on the serving platter or on the side. Warm the prepared salsa briefly if you prefer it warm (microwave 20–30 seconds) and set aside.

Build the Whiskey Tango Fries Nachos

On a large serving platter or oven-safe tray, spread cooked sidewinder fries in an even layer. Scatter chopped bacon evenly over the fries.

Drizzle or spoon warm queso over the fries and bacon so that most pieces get cheesy coverage. Add dollops of pico de gallo across the top and scatter tortilla chips around or over the fries for crunch contrast.

Drizzle the House Ayward (Ranch-style) dressing over the whole plate (or serve on the side). Spoon prepared salsa in small bowls or across the nachos where desired. Garnish with fresh cilantro leaves, pickled jalapeños if using, and serve with lime wedges.

Serve immediately while fries and queso are hot so the chips remain crunchy and the flavors are vibrant.
