Mix rim
In a small shallow dish combine 1 teaspoon Old Bay seasoning and 1 teaspoon coarse salt. Mix thoroughly. Moisten the rim of an Old Fashioned or rocks glass with a lemon wedge and dip the rim into the Old Bay-salt mixture to coat evenly. Set glass aside.
Make Cocktail
Add the bourbon (2 oz), blackstrap rum (0.5 oz), fresh lemon juice (0.75 oz), honey syrup (0.5 oz), and blackstrap molasses (0.25 tbs) into a cocktail shaker.
Add 3 dashes of Old Bay bitters and 1 dash of Angostura bitters into the shaker.
Add a pinch of smoked salt into the shaker to build a subtle smoky-salty backbone. If you don't have smoked salt, use a regular pinch of sea salt.
Fill the shaker with ice, cap, and shake vigorously for 12–15 seconds until the shaker is frosty and the mixture is well chilled and slightly diluted.
Place a large ice cube (or fresh ice) into the prepared glass.
Double-strain the cocktail over the ice into the rimmed rocks glass to remove any molasses or ice shards.
Express the oils of a lemon wheel over the drink by squeezing it gently, then drop the wheel into the drink or rest it on the rim. Optionally add a celery stalk as a rustic garnish and mild savory aroma.
Taste and, if desired, add an extra tiny pinch of smoked salt to the top or an additional dash of Old Bay bitters for a more pronounced savory note.
Serve
Serve immediately. This cocktail pairs well with fried seafood or spicy bar snacks; the Old Bay rim and bitters create a briny, savory contrast to the rich bourbon base.
