Pickles & Marinade
Drain pickle slices or spears in a colander for 10 minutes. Pat dry lightly with paper towels to remove excess surface brine — you want them moist but not dripping.
In a medium bowl combine buttermilk, hot sauce, 1/2 cup ranch dressing, and 1 tsp kosher salt. Stir to combine.
Add the drained pickles to the buttermilk mixture, making sure they are submerged. Cover and refrigerate for 20–30 minutes (this short marinade tames some brine and helps breading adhere while adding heat and tang).
Breading
While pickles marinate, combine flour, cornstarch, cornmeal, panko (if using), garlic powder, onion powder, smoked paprika, black pepper, and cayenne in a shallow wide dish. Whisk thoroughly so seasonings are evenly distributed.
Prepare a second shallow dish or bowl for wet dredge: whisk together eggs and milk until smooth.
Set a wire rack over a baking sheet for finished breaded pickles to rest on while you heat oil. This keeps them crisp and prevents sogginess.
Frying & Finish
Heat a heavy skillet (cast iron preferred) or deep pot over medium-high heat. Add oil to a depth of about 1 to 1.5 inches. Heat oil to 350°F (175°C). If you don't have a thermometer, test by dropping a pinch of breading— it should sizzle and float up steadily.
Working in batches of 6–8 slices (do not overcrowd), remove pickles from marinade letting excess drip off. First dredge each pickle in the flour mixture, pressing lightly so the coating adheres. Shake off excess.
Carefully place coated pickles into the hot oil and fry 2–3 minutes per side, or until golden brown and crisp. Whole spears may take 3–4 minutes. Maintain oil temperature around 325–350°F; lower slightly if browning too fast.
Use a slotted spoon or spider to transfer fried pickles to the wire rack set over a baking sheet to drain. Sprinkle immediately with a light pinch of salt if desired.
Repeat breading and frying with remaining pickles, keeping finished batches warm in a 200°F (95°C) oven if needed.
Ranch Hot Pepper Dipping Sauce
In a small bowl combine the remaining 1/2 cup ranch dressing with hot pepper relish or finely chopped jalapeño to taste. Stir and adjust heat with extra hot sauce if needed. Garnish with chopped chives.
Serve fried wayward pickles hot with the ranch hot pepper dipping sauce on the side.
