Marinate

Pat chicken thighs dry with paper towels. In a bowl or zip-top bag combine buttermilk and 2 tablespoons hot sauce. Add the thighs, submerging them. Cover and refrigerate for at least 2 hours, preferably overnight.

Prepare dredge

In a shallow dish mix together flour, cornstarch, 2 teaspoons salt, 1 teaspoon black pepper, 1 tablespoon smoked paprika, 1 teaspoon garlic powder, 1 teaspoon onion powder, and 1 teaspoon cayenne. Whisk to combine and set aside.

Heat oil

Pour vegetable oil into a heavy-bottomed pot or Dutch oven to a depth of about 2-3 inches (roughly 1 liter total). Heat oil to 325°F (163°C) for initial fry. Use a thermometer for accuracy.

Dredge and first fry

Remove thighs from buttermilk, letting excess drip off. Dredge each thigh thoroughly in the flour mixture, pressing to adhere. Shake off excess. Fry 2–3 thighs at a time (do not crowd) at 325°F for 8–10 minutes until pale golden and internal temp reaches about 145°F (63°C). Transfer to a wire rack set over a baking sheet and let rest 5 minutes.

Crisp fry

Increase oil temperature to 375°F (190°C). Fry the rested thighs for another 3–5 minutes until deep golden brown and internal temp reaches 165°F (74°C). Drain on a wire rack. Meanwhile, melt 2 tablespoons unsalted butter and brush onto the hot thighs once out of the oil to add flavor and gloss.

While thighs rest after the crisp fry, warm 1/2 cup neutral oil in a small saucepan over low heat until just warm (do not smoke). Remove from heat and whisk in 2 tablespoons smoked paprika, 1.5 tablespoons cayenne, 1 tablespoon brown sugar, 1 tablespoon hot sauce, 1 teaspoon apple cider vinegar and 1/2 teaspoon kosher salt until smooth and combined. Taste carefully and adjust heat or sweetness to preference.

Using a pastry brush or spoon, evenly spoon or brush the hot spiced oil over each fried thigh, coating both sides. Place the coated thighs back on the rack to let the sauce absorb for 1–2 minutes.

Whisk eggs

Crack 4 eggs into a bowl, add 2 tablespoons whole milk, 1/2 teaspoon salt and 1/4 teaspoon black pepper. Whisk until completely blended and slightly frothy.

Cook gently

Heat a nonstick skillet over low heat and add 1 tablespoon unsalted butter. Once butter is melted and foamy but not browning, pour in the eggs. Stir continuously with a silicone spatula, scraping the bottom, keeping heat low so the eggs never sizzle. Cook slowly until curds form but eggs remain creamy and slightly runny — about 4–6 minutes. Remove from heat just before fully set; carryover heat will finish them. Taste and adjust seasoning.

Assembly & Bread

Toast buns

Split the brioche rolls and brush cut sides with the 2 tablespoons melted butter. Toast cut side down in a skillet or on a griddle over medium heat until golden and crisp, about 1–2 minutes.

Build the sandwich

Place a toasted bottom bun on a plate. Add optional shredded lettuce if using. Lay one Nashville hot fried thigh on top. Immediately top the hot thigh with a slice of mild cheddar so it softens. Spoon a generous portion of the soft scrambled eggs over the cheese. Add 2 pickle chips on top of the eggs for crunch and acidity. Cap with the toasted top bun. Repeat for remaining sandwiches.

Serve

Serve the sandwiches hot. Offer extra Nashville hot oil or pickles at the table. Each sandwich pairs well with fries or coleslaw.
