Prep & Muddle

Chill glass

Place a double old-fashioned glass (or tiki mug) in the freezer for 5–10 minutes to chill or fill it with a little crushed ice while you prepare the cocktail; discard that ice before serving if chilling with ice.

If you like an herbaceous note, slap one mint sprig between your palms to release aromatics and set aside for garnish. No muddling of mint into the drink is required for a bright, clean flavor.

Mixing

Combine spirits and syrups

In a cocktail shaker, add light rum, dark aged rum, fresh lime juice, orange liqueur, orgeat, and simple syrup.

Add ice

Fill the shaker halfway with cubed ice (not crushed) to properly chill and dilute the mix while shaking.

Shake vigorously

Shake hard for 10–15 seconds until the outside of the shaker becomes frosty and the mixture is well-chilled.

Assemble & Serve

Prepare glass

Fill the chilled serving glass about three-quarters full with crushed ice (approximately 1½–2 cups).

Strain over crushed ice

Double-strain the shaken cocktail over the crushed ice using a Hawthorne strainer and, if available, a fine mesh strainer to keep any small pulp out. Pour gently so the ice holds the drink in a mound.

Top (optional)

If you prefer a slightly brighter, lighter finish, gently float about 1 oz club soda on top by pouring it over the back of a spoon.

Garnish

Insert the reserved mint sprigs into the top of the ice, slap another sprig on top for aroma if desired, add a lime wheel or wedge to the rim, and grate a pinch of fresh nutmeg or cinnamon over the drink for a warm aromatic finish (optional).

Serve immediately with a short straw and a small stirrer so the drinker can mix as it melts.
