Bacon
Oven-bake bacon
Preheat the oven to 400°F (200°C). Line a rimmed baking sheet with foil and place a wire rack on top if you have one. Arrange the 8 slices of thick-cut bacon in a single layer on the rack or directly on the foil. Bake for 15–20 minutes, rotating the pan once halfway through, until the bacon is crisped to your liking. Remove bacon and transfer to a paper-towel-lined plate to drain. Reserve 1 tablespoon bacon fat for toasting bread if desired.
Toast & Spread
Prepare avocado mash
While the bacon bakes, halve and pit the 2 ripe avocados. Scoop the flesh into a bowl and mash with a fork until mostly smooth but still a little chunky. Stir in 1 tablespoon lemon juice, 1 teaspoon salt, 1/2 teaspoon black pepper and 1/4 teaspoon red pepper flakes. Taste and adjust seasoning.
Toast bread
Brush both sides of the 4 slices of sourdough with the reserved 1 tablespoon bacon fat or with the 2 teaspoons olive oil/softened butter. Toast the bread in a skillet over medium heat (about 2–3 minutes per side) until golden and crisp, or grill under a broiler for 1–2 minutes per side. Keep warm.
Spread about 1/4 of the avocado mash evenly on each warm toast slice.
Cheese & Assembly
Add cheese and bacon
Divide the shredded sharp cheddar (about 1 cup) evenly among the 4 toast slices, sprinkling it over the avocado. Tear or lay 2 slices of the cooked bacon on each toast (total 2 slices per toast). Sprinkle the 2 tablespoons grated Parmesan evenly over the top.
Melt cheese
Place the assembled toasts on a baking sheet and broil on high 6–8 inches from the heat for 1–2 minutes, watching closely, until the cheddar is melted and starting to bubble and the Parmesan is lightly golden. Alternatively, put them under a preheated 425°F (220°C) oven for 3–5 minutes to melt the cheese.
Finishing & Serve
Serve immediately. Makes 4 servings (1 toast per serving).
