Prepare rim

On a small plate, combine 1 tablespoon kosher salt and 1 teaspoon coarse black pepper. Run the lime wedge around the outside lip of a highball or pint glass, then press the wet rim into the salt-pepper mix to coat evenly. Set the glass aside.

Cocktail

Build the drink

Fill a cocktail shaker or mixing glass halfway with ice cubes (about 1 cup). Add 2 oz Tito's Handmade Vodka, 4 oz Bloody Mary mix, 0.5 oz fresh lime juice, 0.5 tsp Worcestershire sauce, 0.5 tsp prepared horseradish, 2 dashes hot sauce, and 1 dash freshly ground black pepper.

Mix

Secure the shaker lid and roll (or shake very gently) the mixture for 10–15 seconds to chill and integrate flavors without overly diluting. Alternatively, stir briskly in a mixing glass for 10–15 seconds.

Pour

Fill the prepared rimmed glass with fresh ice. Strain the mixed Bloody Mary over the ice, leaving about 0.5 inch headspace for garnishes.

Garnish

Assemble garnishes

Skewer 3 pitted green olives on a pick. Place the celery stalk into the drink as a stir stick. Garnish the rim with a lime wheel or wedge and rest the olive skewer across the top. Lean the cooked crispy bacon strip on the rim or rest it on top of the ice so it remains crisp.

Serve immediately with a straw and a small plate for the bacon if desired.
