Prep

Remove turkey bacon from the refrigerator and unwrap. If using turkey sausage links, slice each link in half lengthwise or into 1/2" medallions for quicker browning. Pat meat dry with paper towel to remove surface moisture — this promotes browning.

Season lightly

Place turkey bacon or sausage pieces in a shallow bowl or on a plate. Drizzle the 1 tsp olive oil over them and sprinkle the black pepper and garlic powder evenly. Toss gently to coat. If using turkey bacon and you want a touch of sweetness, brush both sides with the optional 1 tsp maple syrup or honey.

Heat a large nonstick or cast-iron skillet over medium heat until hot (about 2 minutes). Add the turkey bacon or sausage pieces in a single layer — do not overcrowd; cook in batches if necessary. For turkey bacon: cook 3–4 minutes per side, turning once, until edges are lightly browned and center is cooked through (internal temp ~165°F/74°C if desired). For sliced turkey sausage: cook 2–3 minutes per side until golden and heated through. Adjust heat to prevent burning; reduce to medium-low if sugars from glaze begin to char.

Oven-baked alternative

Preheat oven to 400°F (200°C). Arrange turkey bacon on a foil-lined baking sheet in a single layer or place sausage pieces on a rack set over the sheet. Bake bacon 10–14 minutes, flipping once halfway, until crisped to preference. Bake sausage 12–15 minutes, turning once, until browned and heated through. Use the optional glaze on bacon during the last 2–3 minutes of baking if desired.

Finish

Transfer cooked turkey bacon or sausage to a plate lined with paper towels to absorb excess fat. Let rest 1–2 minutes. Taste and adjust with a light sprinkle of additional black pepper if desired.

Arrange on a warm platter. Sprinkle chopped parsley over the meat and serve with lemon wedges and optional hot sauce or ketchup on the side. Serve immediately as a side for breakfast or brunch.
