Prepare Beans

Select roast type

Decide whether you want Regular or Decaf. For Regular use the medium-roast whole bean coffee. For Decaf replace the regular beans with the decaffeinated medium-roast whole beans in equal proportion.

If using a pre-blended Cream City style bag, use that directly. If creating a batch from green or single-origin beans to approximate the blend, combine beans in a 60:40 ratio of balanced medium-roast base and a slightly brighter medium roast for complexity (not included as separate ingredients above).

Grind & Measure

Measure 3/4 cup (about 55–60 g) of coffee beans for a 12-cup pot. This yields a standard brew strength (~1:15 coffee-to-water). If you prefer stronger coffee, increase to 1 cup. For decaf, use the measured decaf beans.

Grind to a medium consistency suited for drip coffee (texture like coarse sand). If using a French press, grind coarser; for pour-over, grind slightly finer.

Brew

Fill the coffee maker’s reservoir with 12 cups (about 2.8 liters) of filtered water. For smaller pots scale water and coffee proportionally (use a ratio of about 1 gram coffee : 15–17 grams water).

Place a filter in the basket and add the measured ground coffee, leveling gently—do not tamp.

Start the brew cycle. Total contact and brew time on a drip machine will be roughly 5–7 minutes; French press brews 4 minutes before plunging. For pour-over, aim for a total brew time of 3:30–4:30 minutes with a bloom of 30–45 seconds using ~2x the coffee weight of water for the bloom phase.

When brewing is complete, remove the carafe promptly from the hot plate to avoid over-extraction and bitterness.

Serve & Customize

Pour coffee into cups. Offer milk, cream, sugar, brown sugar and optional vanilla for guests to customize. Typical additions: 1–2 tablespoons milk/cream and 1 teaspoon sugar per 8 oz cup, adjusted to taste.

If storing leftover coffee, transfer to a thermal carafe immediately to preserve flavor for up to 2 hours. Avoid reheating on the hot plate.

Scaling & Storage

To make a fresh 1-lb bag of Cream City Blend at home: roast or purchase two complementary medium roasts (a round, chocolatey base plus a brighter mid roast) and blend at approximately 70% base : 30% bright. Store beans whole in an airtight container away from light and heat; grind just before brewing.
