Combine and dry shake

Add Hendrick's gin (2 oz), fresh lemon juice (0.75 oz), maple syrup (0.5 oz), fresh orange juice (0.5 oz), and egg white (0.5 each, if using) to a cocktail shaker without ice. Seal and dry-shake vigorously for 15–20 seconds to emulsify the egg white and create a silky foam.

Shake with ice

Open the shaker and add ice (about 6 cubes). Seal and shake vigorously for another 12–15 seconds until well-chilled and slightly frothy. This chills and dilutes the drink to balance sweetness and acidity.

Strain into glass

Double-strain the contents into a chilled coupe or rocks glass (if you prefer it on the rocks, fill the glass with fresh ice first). Use a fine mesh strainer over the standard strainer to remove small ice shards and ensure a smooth texture.

Top & Garnish

Top the cocktail with sour soda (2 oz). Gently pour it down the side of the glass to preserve the foam if egg white was used.

Add 2 dashes of Angostura bitters on top of the foam (if present). Using a toothpick or a bar spoon, you can gently swirl the bitters into a simple pattern for presentation.

Express the oils of an orange twist over the drink and drop the twist or place a thin orange wheel on the rim as garnish.

Serve immediately. If served over ice, serve with a short stirring spoon so the guest can mix the soda through the cocktail as desired.
