Brew 1 cup of strong coffee using Stone Creek or another dark-roast coffee. Aim for a concentrated brew (use slightly more coffee grounds than usual) and keep it hot. If using pre-brewed coffee, reheat gently so it remains hot but not boiling.

Combine and Warm

Preheat a heatproof glass or Irish coffee mug by rinsing with hot water, then discard the rinse. In the warmed mug, pour 2 fl oz Jameson Irish Whiskey and 0.5 fl oz simple syrup.

Add 6 fl oz of the freshly brewed hot coffee to the mug, pouring gently to combine with the whiskey and syrup. Stir once gently to integrate the syrup.

Taste and adjust sweetness: add a touch more simple syrup if you prefer sweeter, or a splash more whiskey for a stronger jolt. Stir gently after adjustments.

Garnish & Finish

Lightly whip the heavy cream to soft peaks (it should be pourable but hold a gentle shape). Spoon or gently float 2 tablespoons of the whipped cream on top of the hot coffee mixture so it sits as a layer.

Optionally dust the cream with a small pinch (about 1/4 tsp) of grated dark chocolate or cocoa powder for aroma and presentation.

Serve immediately while the drink is hot and enjoy.
