Muddle mint
Place the fresh mint leaves in the bottom of a shaker or mixing glass. Add the fresh lime juice. Gently muddle the mint and lime juice together 6–8 times to release the mint oils without shredding the leaves.
Add spirits and cherry
Pour the Absolut Lime vodka and the cherry juice into the shaker with the muddled mint and lime.
Add ice and shake
Add enough ice to nearly fill the shaker (about 1 cup). Secure the shaker lid and shake vigorously for 10–12 seconds until well chilled.
Prepare serving glass
Fill a mule mug or highball glass with fresh ice (you may use crushed ice if preferred). Strain the shaken mixture into the prepared glass over the ice using a fine strainer to catch mint bits.
Top with ginger beer
Gently pour 4 oz Gosling’s ginger beer over the strained cocktail. Give the drink one gentle stir (1–2 revolutions) to combine the ginger beer with the vodka-cherry base without flattening the carbonation.
Garnish and serve
Slap a few extra mint leaves between your palms to bruise and release aroma, then tuck them into the drink. Add a lime wheel or wedge on the rim and drop in 1–2 cherries (maraschino or fresh). Serve with a straw or stirrer.
