Beat eggs

Crack the 6 large eggs into a medium bowl. Add 3 tablespoons whole milk, 1 teaspoon salt and 1/2 teaspoon black pepper. Whisk vigorously until completely combined and slightly frothy (about 20–30 seconds). The milk lightens and tenderizes the omelette.

Preheat skillet

Place a nonstick 10–12 inch skillet over medium-low heat. Add 1 tablespoon unsalted butter and swirl until melted and foaming but not browned. Reduce heat to low–medium; omelettes cook best gently.

Cook eggs

Pour the beaten eggs into the warm skillet. Let sit undisturbed for about 10–15 seconds, then using a flexible spatula, gently pull the edges toward the center while tilting the pan to allow uncooked egg to flow to the edges. Repeat around the pan until the eggs are mostly set but still slightly moist on top (about 2–3 minutes total). Do not overcook; the omelette should be tender.

Prepare filling

While the eggs begin to set, combine 120 g thinly sliced smoked salmon (roughly chopped into bite-size pieces), 1 finely minced shallot, 2 tablespoons snipped fresh chives, 3 tablespoons creme fraiche, 1 tablespoon rinsed capers (roughly chopped if large), 1 teaspoon lemon zest and 1/2 tablespoon lemon juice in a small bowl. Stir gently to combine. Taste and adjust lemon or salt if needed (be cautious; smoked salmon and capers are salty).

Assemble omelette

When the omelette is mostly set but still slightly creamy on top, spoon the smoked salmon mixture down one half of the omelette, leaving a 1/2 inch border from the edge. Use about half the filling for two omelettes (recipe yields two servings); reserve any extra for plating or additional omelettes.

Fold and finish

Using the spatula, gently fold the empty half of the omelette over the filling to create a half-moon. Let cook for another 30–45 seconds—just long enough to warm the filling but keep the interior soft. Tilt the pan and carefully slide the omelette onto a warm plate. Repeat cooking process for the second omelette if making individually (or make one large omelette and cut in two).

Optional garnish & serving

Finish and plate: Top each omelette with a small dollop (about 1/2 tablespoon) of creme fraiche if desired, a few extra snips of chives, a sprinkle of lemon zest, and a couple capers. Garnish with a dill sprig and a handful of microgreens or baby arugula tossed lightly with a squeeze of lemon (optional). Serve immediately with toasted sourdough or brioche slices and extra butter on the side.
