Prepare the Crabs

Rinse the softshell crabs under cold water and remove the gills and the eyes. Pat them dry with paper towels.

Prepare the Breading

In a shallow dish, mix the flour, cornmeal, salt, black pepper, and cayenne pepper. In another bowl, whisk together the eggs and milk.

Bread the Crabs

Dip each crab first into the egg mixture, allowing excess to drip off, then coat thoroughly in the flour-cornmeal mixture. Shake off any excess breading.

Heat the Oil

In a large skillet or frying pan, heat the vegetable oil over medium-high heat until shimmering.

Fry the Crabs

Carefully place the breaded crabs in the hot oil, frying in batches if necessary. Cook for about 3-4 minutes per side, or until golden brown and crispy.

Drain and Serve

Remove the crabs from the oil and drain on paper towels. Serve immediately with lemon wedges and a sprinkle of fresh parsley.
