Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips (about 1/4 inch thick) to create fries. Rinse the cut fries in cold water to remove excess starch, then pat them dry with paper towels.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Carefully add the dried potato strips to the hot oil in batches, ensuring not to overcrowd the pot. Fry until golden brown and crispy, about 5-7 minutes. Remove with a slotted spoon and drain on paper towels. Immediately sprinkle with salt and paprika while hot.

Slice the ribeye steak against the grain and serve alongside a generous portion of French fries. Optionally, garnish with fresh parsley and lemon wedges for added flavor.
