Calamari Preparation

Prepare the Calamari
Clean the fresh calamari by removing the insides, skin, and beak. Rinse under cold water and cut into rings.

Make the Breading
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well.

Dredge the Calamari
Dip the calamari rings into the wet mixture, allowing excess to drip off, then coat them in the flour mixture. Set aside.

Heat the Oil
In a large, deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 375°F (190°C).

Fry the Calamari
Carefully add the breaded calamari to the hot oil in batches. Fry for about 2-3 minutes or until golden brown. Remove and drain on paper towels.

Add Tomatoes and Seasoning
Pour in the canned crushed tomatoes and add oregano, salt, and black pepper. Stir well to combine.

Simmer the Sauce
Bring the mixture to a simmer. Reduce heat and let it cook for about 15-20 minutes, stirring occasionally.

Add Fresh Basil
Stir in the chopped fresh basil and simmer for another 5 minutes.
