Edamame

Steaming and seasoning

Prepare steamer
Pour 2 cups of water into a medium saucepan (or pot) and bring to a gentle boil over medium-high heat. Place a steamer basket or metal colander so it sits above the water surface without touching the water.

Add edamame
Place 1 cup of fresh or frozen edamame (in pods) in the steamer basket in a single layer if possible. If using frozen edamame, do not thaw first.

Steam
Cover the pot and steam the edamame for 4 to 6 minutes for fresh pods, or 6 to 8 minutes for frozen pods, until the pods are bright green and heated through. Check at the shorter time to avoid overcooking; pods should be tender but still slightly firm.

Salt and toss
Carefully remove the steamer basket from the pot (watch for steam). Transfer the hot edamame to a bowl. Sprinkle 1 teaspoon coarse sea salt (or kosher salt) over the pods while they are hot and toss or shake the bowl so the salt clings to the pods.

Optional finish
If desired, finish with up to 1 teaspoon flaky finishing salt for texture and a squeeze of lemon or lime to taste. Toss briefly to distribute.

Serve immediately while warm. To eat, squeeze each pod between your fingers or bite along the seam to pop the beans out of the pod; do not eat the pods.
