Crab Filling

Prepare filling
In a medium bowl, combine the finely chopped crab meat and softened cream cheese. Use a fork to mash and mix until smooth and well incorporated.

Prepare wrappers
Lay out a clean work surface and place the wonton wrappers in a single layer, keeping unused wrappers covered with a damp towel so they don’t dry out.

Place about 1 tablespoon (heaping) of the crab filling in the center of each wonton wrapper. Lightly moisten the wrapper edges with cold water using your finger or a small brush.

Fold each wrapper into your desired shape: classic purse—bring opposite corners together and twist to seal; or triangle—fold into a triangle and press edges thoroughly; or make a small pouch and pinch the top closed. If desired, secure with a toothpick (remove before serving). Ensure seams are well sealed to prevent filling from leaking during frying.

Optional light dusting or slurry
For an extra-crisp seal, lightly dust each finished Rangoon with 1/4–1/2 teaspoon of flour and shake off excess. Alternatively, whisk 1 tsp cornstarch with 1 tbsp cold water to make a thin slurry and dab a little on the seams before sealing.

Heat the oil
Pour 1.5–2 cups of oil into a deep skillet or pot (enough to submerge Rangoon halfway to fully) and heat over medium-high to 350°F (175°C). If you don’t have a thermometer, test by dropping a small piece of wrapper — it should sizzle and brown in about 30–45 seconds.

Fry in batches (do not overcrowd). Gently lower 2–3 Rangoons into the hot oil using a slotted spoon or spider. Fry for about 1.5–3 minutes, turning as needed, until they are golden brown and crisp on all sides. Adjust heat as necessary to maintain oil temperature.

Using a slotted spoon, transfer cooked Rangoons to a paper towel–lined plate to drain. Allow them to rest 1–2 minutes to set; the filling will be very hot. Repeat with remaining Rangoons.
Garnish & Serving

Transfer Crispy Crab Rangoon to a serving plate. Remove any toothpicks if used.

Serve immediately with sweet chili or duck sauce on the side. Sprinkle toasted sesame seeds and sliced green onion over the Rangoons for garnish, if desired.

Note: Allow to cool slightly before eating to avoid burning from the hot filling.
