Heat a medium saucepan over medium heat. Add olive oil and butter; once butter melts and foams, add the diced onion. Stir in the tomato paste and cook, stirring constantly, for 1–2 minutes. Toasting the paste deepens its flavor and reduces raw acidity.

Add tomatoes and liquids
Pour in the crushed tomatoes and stock, stirring to combine and scraping any browned bits off the bottom of the pan. Bring the mixture to a gentle simmer.

Add Worcestershire sauce, soy sauce, honey, Dijon mustard, brown sugar, smoked paprika, red pepper flakes, dried oregano, dried basil, bay leaf, salt, and black pepper. Stir to combine. Reduce heat to low so the sauce maintains a gentle barely-there simmer. Cook, uncovered, for 20–25 minutes, stirring occasionally, until the sauce thickens slightly and the flavors meld.

Finish with cream
Remove the bay leaf. Stir in the heavy cream and continue to cook for another 3–5 minutes over low heat until the sauce is warmed through and slightly thickened. Taste and adjust seasoning, adding more salt, pepper, or sugar if needed to balance acidity and heat.

Off the heat, stir in the lemon juice and chopped parsley to brighten the sauce. If desired, whisk in grated Parmesan for extra savory depth. Let the sauce rest for 5 minutes before serving to allow flavors to settle.
