Prepare aromatics
Finely grate the shallot (or small onion) and mince the garlic. Place them on a cutting board and sprinkle with a tiny pinch of salt; let sit 2–3 minutes to draw out moisture and mellow sharpness.

Mix base and seasonings
In a medium bowl combine 1 cup mayonnaise, 2 tsp mild curry powder, 1 tsp Dijon mustard, 1 tbsp fresh lemon juice, and 1 tsp honey. Whisk until the curry powder is fully incorporated and color is uniform.

Add aromatics and adjust texture
Stir the grated shallot and 1/2 tsp minced garlic into the mayonnaise mixture. Add 1/4 tsp smoked paprika, 1/2 tsp sea salt, and 1/4 tsp black pepper. If the sauce is too thick for your use (for drizzling or dipping), whisk in up to 1 tbsp neutral oil, 1 tsp at a time, until you reach the desired consistency.

Taste and finish
Taste and adjust seasoning: add more salt, lemon juice, or honey in 1/4-tsp or 1/2-tsp increments to balance saltiness, acidity, and sweetness. If you prefer more curry flavor, add up to another 1/2–1 tsp curry powder, stirring and tasting after each addition.

Rest and serve
Transfer the sauce to a jar or airtight container and refrigerate at least 30 minutes to let flavors meld (overnight is better). Stir in 1 tbsp chopped fresh cilantro or parsley just before serving, if using. Serve chilled or at cool room temperature as a condiment for fries, grilled meats, seafood, sandwiches, or salads.
