Prepare dates
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat. If dates are very sticky, cut a lengthwise slit and remove the pit (if not already pitted).
Stuff dates
Firmly press a toasted almond or pecan half into the cavity of each date. If using cheese, add about 1/4 teaspoon of goat or blue cheese on top of the nut inside the date before closing it around the filling.
Wrap with prosciutto or bacon
Cut each prosciutto slice in half crosswise (if using thin bacon, cut into 12 strips). Wrap one half-slice around each stuffed date so the seam is on the bottom. Secure with a toothpick placed lengthwise through the date to hold the wrap.
Glaze & Bake
Glaze
Whisk together the honey (or maple syrup) and balsamic vinegar in a small bowl. Brush or drizzle about half the glaze over the wrapped dates, reserving the rest for after baking. Lightly sprinkle each date with a small pinch of freshly ground black pepper.
Bake
Arrange the wrapped dates seam-side down on the prepared baking sheet without crowding (they can touch slightly). Bake in the preheated oven for 12–15 minutes, until the prosciutto or bacon is crisp at the edges and the dates are warmed through. If bacon was used and you want it crisper, broil 1–2 minutes while watching closely.
