Gumbo Base
Make a roux
In a medium saucepan over medium-low heat, melt the butter (or warm the oil). Add the flour and whisk constantly to form a smooth paste. Cook, stirring constantly, until the roux turns a deep caramel color, about 12–18 minutes. Adjust heat so it does not burn; it should smell nutty and be evenly colored.
Add stock
Slowly whisk in the chicken stock a little at a time to avoid lumps. Increase heat to medium and bring to a gentle simmer, scraping any browned bits from the bottom. Simmer 8–10 minutes to thicken slightly and develop flavor.
Proteins & Seasoning
Add the shredded cooked chicken and sliced sausage to the simmering gumbo base. Stir to combine.
Add Creole/Cajun seasoning, dried thyme and the bay leaf. Stir, then simmer gently for 8–12 minutes to let flavors marry and to heat the proteins through. Taste and adjust seasoning with salt and pepper.
Vegetables & Finish
If using okra, add the sliced okra in the last 6 minutes of simmering so it tenderizes but does not overcook. If you prefer thicker gumbo, simmer a bit longer uncovered; for thinner, add a splash more stock.
Remove from heat. Discard the bay leaf. Stir in hot sauce if using. If using file powder, sprinkle it in a small amount (about 1/8 tsp) and stir just before serving to avoid gummy texture. Adjust final salt and pepper to taste.
