Prep vegetables and cheese
Finely dice the yellow onion (to measure 1/2 cup), finely dice the green bell pepper (1/4 cup), and seed and mince the jalapeño (about 1/2 jalapeño). Grate the cheddar and pepper jack cheeses and soften the cream cheese so it will blend easily.
Sweat aromatics
In a medium heavy-bottomed saucepan over medium heat, melt 2 tbs unsalted butter. Add the diced onion, bell pepper, and minced jalapeño. Cook, stirring occasionally, until softened and translucent, about 4–5 minutes. Add 2 tsp minced garlic and cook another 30–45 seconds until fragrant.
Make roux
Reduce heat to medium-low. Sprinkle 2 tbs all-purpose flour over the softened vegetables and stir constantly for 1–1½ minutes to cook the raw flour taste and coat the vegetables.
Add dairy
Slowly whisk in 1 cup whole milk and 1/2 cup half-and-half in a thin stream to avoid lumps. Increase heat slightly and continue whisking until the mixture thickens to a smooth, slightly thickened sauce, about 2–3 minutes.
Incorporate cheeses
Lower heat to low. Add the 2 oz softened cream cheese and whisk until incorporated. Add the grated sharp cheddar (2 cups) and grated pepper jack (1 cup) in small handfuls, stirring until each addition melts and forms a smooth, cohesive queso. Keep the sauce at a low gentle simmer—do not boil once cheese is added to avoid graininess.
Finish base
Stir in 1 tsp Worcestershire sauce and 1/2 tsp fresh lemon juice. Taste and adjust seasoning after adding the Cajun seasoning mixture (next section). Keep warm on the lowest heat setting while you add seasonings and optional add-ins.
Cajun Seasoning & Add-ins
In a small bowl combine 1 tsp smoked paprika, 1/2 tsp onion powder, 1/2 tsp garlic powder, 1/4 tsp dried thyme, 1/4 tsp cayenne pepper, 1/2 tsp sweet paprika, 1 tsp kosher salt, and 1/2 tsp freshly ground black pepper. Whisk to blend.
Stir the seasoning blend into the warm queso base in 1/2 increments, tasting as you go until you reach the desired heat and flavor balance. If using, stir in 1/2 cup chopped cooked Andouille or smoked sausage and heat through for 2–3 minutes so the sausage flavors meld with the cheese sauce.
If the queso becomes too thick after adding seasonings or sausage, loosen it with 1–2 tbs warm milk or half-and-half until it reaches a dip-friendly consistency.
Adjust salt and cayenne to taste. Sprinkle the chopped fresh cilantro over the top just before serving.
To Serve
Transfer the Cajun Queso to a warmed serving bowl or small slow cooker set to low to keep warm. Serve immediately with tortilla chips or toasted bread slices and lime wedges on the side.
Store leftover queso in an airtight container in the refrigerator for up to 3 days. Reheat gently over low heat on the stove or in a microwave in 30-second increments, stirring and adding a splash of milk if needed to restore creamy texture.
