Crawfish & Stock
Prepare crawfish
If using frozen crawfish tails, thaw overnight in refrigerator or under cold running water and pat dry. If using live whole crawfish (less common for home cooks), remove tails and reserve. Measure 1 lb of peeled tails.
Bring stock to a gentle simmer in a small saucepan and keep warm over low heat while you make the roux and vegetables.
Vegetables (Holy Trinity + aromatics)
In a heavy-bottomed skillet or Dutch oven over medium heat, melt 2 tablespoons of the butter. Add the diced onion, bell pepper and celery. Sauté, stirring occasionally, until the vegetables are softened and the onion is translucent, about 6–8 minutes. Add the minced garlic and cook 30–45 seconds until fragrant. Stir in the tomato paste and cook 1 minute to deepen flavor.
Roux & Seasoning
In a separate small saucepan or in the same Dutch oven moved aside, make a light roux: heat the vegetable oil over medium heat until shimmering. Whisk in the all-purpose flour and cook, stirring constantly, until the roux turns a deep peanut-butter color (light to medium brown) — about 6–8 minutes. Be attentive and stir to prevent scorching. For a darker, more traditional flavor you may cook 1–2 minutes longer but reduce heat to avoid burning.
Carefully add about 1/2 cup of the warm stock to the roux while whisking to thin it out, then transfer the roux into the skillet with the softened vegetables. Stir to combine and allow it to bubble gently for 1–2 minutes so the flavors meld.
Add the remaining warm stock slowly, stirring to incorporate. Bring the mixture to a gentle simmer and allow it to thicken slightly for 5 minutes.
Stir in Cajun seasoning, smoked paprika, black pepper, cayenne, and salt. Taste and adjust seasoning — remember crawfish and stock can be salty so season gradually.
Crawfish & Simmering
Add the crawfish tails to the simmering étouffée. Reduce heat to low and simmer gently until tails are heated through and flavors meld, 4–6 minutes. Avoid prolonged simmering to keep crawfish tender.
Stir in the remaining 2 tablespoons of butter, Worcestershire sauce and lemon juice. Taste and adjust seasoning (salt, cayenne or Cajun seasoning) as needed.
Finishers & Garnish
Remove from heat. Fold in chopped parsley and most of the sliced green onions, reserving a little for garnish.
Spoon the hot étouffée over cooked long-grain white rice in bowls or cups. Garnish with remaining green onions and an extra pinch of fresh parsley. Serve immediately.
