Beef Patties

Portion and shape

Divide the 10 oz ground beef into three equal portions (about 3.3 oz / ~95 g each). Lightly roll each portion into a loose ball and then press into discs about 3 inches (7–8 cm) in diameter and roughly 1/2 inch (1.3 cm) thick. Do not overwork the meat; compact but still slightly loose for a tender patty.

Season

Season both sides of each patty evenly with fine sea salt and freshly ground black pepper. Use approximately 1 tsp salt total across the three patties and the 1 tsp pepper as specified (adjust to taste).

Cook

Heat a skillet or griddle over medium-high heat until hot. Add 1 tsp vegetable oil and spread to coat. Place the patties on the hot surface, leaving space between them. Cook undisturbed for 2–3 minutes to develop a crust. Flip and cook an additional 1½–2 minutes for medium doneness. Place one American cheese slice on each patty immediately after flipping (or in the final minute) so it melts over the patty. Internal temperature should reach 160°F (71°C) for well-done beef (adjust to local food-safety guidance). Remove from heat and let rest 1–2 minutes.

Prep buns

Lightly butter the cut faces of the three brioche slider buns with the softened unsalted butter (about 1 tsp total). Toast the buns face-down in the same skillet or on a separate pan over medium heat for 30–60 seconds until golden and slightly crisp. Watch carefully to prevent burning.

Assemble sliders

Place each toasted bun bottom on a plate. Put a cheeseburger patty (cheese side up) on each bottom bun. Add two dill pickle slices per slider on top of the cheese. Spoon 1 tablespoon of ketchup onto the inside of each top bun and place the top bun over the pickles to complete the slider.

Serve

Serve immediately while hot. Optionally secure each slider with a small toothpick. These three sliders are sized as a starter portion; serve with extra ketchup on the side if desired.
