Garlic Aioli
Make aioli
In a small bowl combine 1 tablespoon mayonnaise, 1 tablespoon Greek yogurt, 1 teaspoon minced garlic, 1 teaspoon lemon juice, and 1 teaspoon Dijon mustard. Whisk until smooth. Season with 1 teaspoon salt and 1/4 teaspoon black pepper, tasting and adjusting salt/acid as needed. Refrigerate while you prepare the rest so flavors meld.
Waffle Fries (side)
Cook fries
Preheat oven according to frozen waffle fries package (typically 425°F / 220°C). Toss 12 oz frozen waffle fries with 1 tablespoon olive oil (optional) and spread in a single layer on a rimmed baking sheet. Bake according to package directions, turning once, until golden and crispy (usually 18–25 minutes). In the last minute of baking, sprinkle with 1/2 teaspoon salt. Keep warm.

While fries bake, wash and dry 2 cups lettuce leaves and set aside. Slice 1 tomato into 4 thin slices. Halve and pit 1 avocado; slice into 8 thin slices or mash slightly with a fork if preferred. Keep slices ready for assembly.
Heat tortillas & cheese
Warm a large skillet or griddle over medium heat. Lightly brush or rub 1 teaspoon butter or neutral oil on one side of each tortilla. Place tortillas buttered-side down on the skillet, heat 20–30 seconds until pliable. Flip, place 1 Swiss cheese slice on each tortilla and allow it to melt slightly (~20–30 seconds). Remove tortillas to a clean surface, cheese-side up.
Assemble wraps
Spread about 1/2 tablespoon of the garlic aioli over the melted cheese on each tortilla. Layer 3 oz sliced turkey (divide 12 oz among 4 tortillas), 2 cooked bacon strips (per wrap), a quarter of the tomato slices, a quarter of the avocado slices (or a few spoonfuls of mashed avocado), and 1/2 cup lettuce per wrap. Season with a pinch of freshly ground black pepper.
Roll & finish
Fold the sides of each tortilla in, then roll tightly from the bottom to form a compact wrap. If desired, return seam-side down to the hot skillet for 30–60 seconds per side to crisp the tortilla and set the seam. Remove and slice in half on a slight diagonal.
Serve
Plate each Cali Wrap half with a portion of the warm waffle fries. Serve immediately, offering extra garlic aioli on the side for dipping.
