Prepare and desalinate jellyfish

If the packaged edible jellyfish is very salty, rinse under cold running water for 30–60 seconds, then soak in a bowl of cold water for 5–10 minutes, changing the water once. Drain and gently squeeze to remove excess water. Shred or slice into 1/4-inch wide strips if not already prepared.

Salt rub & rest

Place the shredded jellyfish in a mixing bowl. Sprinkle with 1.5 tbs kosher salt and gently toss for 30 seconds to draw out excess moisture and any remaining off-flavors. Let sit 3–5 minutes, then rinse briefly under cold water and drain well. Pat dry with paper towels.

Make the marinade

In a small bowl combine 3 tbs rice vinegar, 2 tsp sesame oil, 1.5 tbs light soy sauce and 1 tsp sugar. Whisk until sugar dissolves. Add the minced garlic and julienned ginger and stir to combine.

Marinate jellyfish

Add the prepared jellyfish to the marinade and toss to coat evenly. Cover and refrigerate for at least 30 minutes and up to 2 hours to allow flavors to penetrate. Taste after 30 minutes and adjust seasoning if necessary (more vinegar for tang, more soy for salt).

Aromatics & Crunch

About 10 minutes before serving, fold in thinly sliced scallion whites and most of the green parts into the marinated jellyfish. Add 1 tsp toasted sesame seeds and 2 tbs crushed toasted peanuts (if using) and toss gently to combine, preserving some scallion greens and sesame for garnish.

Seasoning & Garnish

Adjust final seasoning: add up to 1 tsp Chinese black vinegar or extra rice vinegar if you want more acidity, and 1 tsp chili oil or sliced fresh chili if you want heat. Stir in 0.25 tsp freshly ground black pepper. Taste and correct balance: aim for bright, slightly salty, mildly sweet and pleasantly nutty.

Just before serving, drizzle the extra 0.5 tsp toasted sesame oil over the jellyfish, sprinkle remaining scallion greens, cilantro leaves, and extra toasted sesame seeds on top for aroma and presentation.

For Serving

Arrange a bed of thinly sliced cucumber or watercress on a serving plate if desired. Place the dressed salted jellyfish on top and scatter any remaining peanuts and herbs. Serve chilled or at cool room temperature as a light appetizer or part of a seafood platter.

Storage: keep leftovers covered in the refrigerator and consume within 24–36 hours for best texture. The jellyfish will become chewier over time.
