Soak the beans (preferred)

Rinse the dried beans and remove any stones. Place beans in a large bowl and cover with 6 cups of water. Soak for at least 6 hours or overnight. Drain and rinse before cooking. (If short on time, use quick-soak: cover with water, bring to a boil 2 minutes, remove from heat, cover 1 hour, then drain.)

Sauté the aromatics

Heat 2 tablespoons oil in a large heavy pot or Dutch oven over medium heat. Add the chopped onion, diced bell pepper and diced celery (the 'holy trinity') and sauté, stirring occasionally, until softened and translucent, about 6–8 minutes. Add the minced garlic and cook 30–45 seconds until fragrant.

Brown the ham hock / meat

Push vegetables to the side, add the smoked ham hock (or pieces of smoked pork/andouille) and brown briefly on all sides for 2–3 minutes to build flavor. If using sliced andouille, sauté until edges are slightly browned.

Add seasonings

Stir in the dried thyme, paprika, cayenne, bay leaves, salt, black pepper and sugar (if using). Cook with the aromatics for 30 seconds to bloom the spices.

Add beans and liquid

Add the drained soaked beans to the pot and pour in 6 cups of water or low-sodium stock. Scrape any browned bits from the pot into the liquid. Bring to a gentle boil over medium-high heat.

Simmer gently

Once boiling, reduce heat to low so the pot maintains a gentle simmer. Cover partially with a lid and simmer until beans are very tender and beginning to break down, 1.5–2 hours. Stir occasionally and check liquid level; add up to 1–2 cups extra hot water or stock if beans become dry. Remove foam that may develop with a spoon.

Mash for creaminess

When beans are tender, remove the ham hock. Use a potato masher or fork to mash about 1/3 of the beans against the side of the pot to thicken the broth and create a creamy texture. If you prefer a smoother stew, use an immersion blender for a few short pulses, leaving some whole beans for body.

Finish with meat & adjust seasoning

Return any shredded meat from the ham hock to the pot (remove bones and fat). Simmer uncovered 10–15 minutes more to meld flavors and reduce slightly. Taste and adjust seasoning with additional salt, pepper or cayenne as desired.

Serve

Spoon cooked white rice into bowls (about 1 cup cooked rice per serving). Ladle hot red beans over the rice. Garnish with chopped fresh parsley and sliced scallions. Serve hot with crusty bread or cornbread if desired.

Notes on alternatives and timing

If using a pressure cooker/Instant Pot: after sautéing aromatics and browning meat, add soaked beans and 4–5 cups stock, lock lid and cook on high pressure for 18–22 minutes, then natural release 15 minutes. Stir, mash some beans, and adjust seasoning. Total active time will be shorter. Cooking time above assumes soaked beans; unsoaked beans will take longer (2–2.5 hours simmer) or 35–45 minutes under pressure.
