Pat the alligator meat dry with paper towels. Trim away any excess fat or connective tissue and cut into 1-inch bite-size cubes. Place cubes in a medium bowl or a resealable plastic bag.
Make the marinade by whisking together the buttermilk, hot sauce, Worcestershire sauce, garlic powder, salt, and black pepper. Pour marinade over the alligator cubes, ensuring they are fully submerged or well-coated. Cover or seal and refrigerate for at least 2 hours and up to overnight. This tenderizes the meat and infuses flavor.
Breading
Prepare the dry breading: in a shallow wide bowl or plate, whisk together the all-purpose flour, cornmeal, cornstarch, Creole/Cajun seasoning, paprika, onion powder, garlic powder, salt, and black pepper until evenly combined.
Remove the marinated alligator from the refrigerator. Working in batches to avoid overcrowding, drain excess buttermilk from the meat (you can shake gently). Dredge each piece first in the dry breading, then dip in the egg wash, then return to the dry breading for a double-coat. Press the dry mix onto the meat so it adheres well. Place breaded pieces on a wire rack and let rest for 10–15 minutes to set the crust.
Frying & Serving
Heat oil: pour the vegetable or peanut oil into a heavy-bottomed pot or Dutch oven to a depth of about 2 inches (roughly 3–4 cups depending on pot size). Heat over medium-high until the oil reaches 350°F (175°C). If you don't have a thermometer, test by dropping a small pinch of breading into the oil—if it sizzles and browns in about 45–60 seconds, the oil is ready.
Fry the alligator in batches (do not overcrowd). Gently lower breaded pieces into the hot oil with a slotted spoon or spider and fry until golden brown and crisp, about 3–5 minutes per batch depending on piece size. Stir gently mid-fry so pieces cook evenly. Internal temperature should reach 145°F (63°C) for safe consumption; tail meat typically cooks quickly. Adjust heat to maintain oil at 325–350°F.
Remove fried pieces with a slotted spoon and transfer to a wire rack set over a sheet pan lined with paper towels to drain. Keep finished batches warm in a 200°F oven while remaining batches cook, if desired.
