Make a dark roux

In a heavy-bottomed Dutch oven or large saucepan, heat the vegetable oil and butter over medium heat until butter melts. Add the flour and stir constantly with a wooden spoon or whisk. Cook the roux, stirring continuously, until it turns deep brown (color of peanut butter to milk chocolate), about 12–18 minutes. Reduce heat slightly if it begins to smoke; patience is key to develop flavor without burning.

Once the roux reaches the desired color, slowly whisk in 1 cup of the chicken stock to loosen the roux. Add remaining stock gradually while whisking to create a smooth sauce. Bring to a gentle simmer.

Add the chopped onion, bell pepper, and celery to the simmering roux mixture. Stir to combine and simmer over medium-low heat until vegetables soften, about 8–10 minutes.

Add the minced garlic and tomato paste; cook for 1–2 minutes, stirring, until garlic is fragrant and tomato paste darkens slightly.

Stir in the crawfish tails and sliced andouille sausage (if using). Simmer gently — do not boil hard — for 6–8 minutes to let the crawfish warm through and absorb flavors. If crawfish are frozen, thaw completely and pat dry before adding; if raw, cook separately first.

Seasoning & Finish

Add Creole seasoning, paprika, dried thyme, bay leaf, hot sauce, Worcestershire sauce, salt, and pepper. Stir and taste; adjust seasoning as needed. Keep the mixture at a low simmer for 5–7 minutes to meld flavors.

If you prefer a thicker étouffée, remove the pot from heat and stir in filé powder (start with 1/4 tsp). Filé thickens as it cools; do not boil after adding filé or it will become stringy.

Stir in chopped parsley, sliced green onions, and lemon juice (if using) just before serving. Remove and discard the bay leaf.

To Serve

Spoon 1/2 to 3/4 cup of cooked rice into each serving bowl or cup. Ladle the hot crawfish étouffée over the rice (about 3/4 to 1 cup étouffée per serving). Garnish with additional parsley and green onions if desired.

Serve immediately with extra hot sauce on the side.
