Prepare potatoes

If using fresh russets: peel (optional) and cut potatoes into 1/4–1/2 inch fries. Rinse cut potatoes under cold water until water runs clear to remove surface starch. Soak the fries in a bowl of cold water for 20–30 minutes to crisp. If using frozen fries, skip soaking and follow package thawing instructions if applicable.

Dry fries

Drain the soaked potatoes and spread them on a clean kitchen towel or paper towels. Pat completely dry — moisture will cause oil splatter and soggy fries.

Heat oil

In a heavy-bottomed pot or deep fryer, pour oil to a depth of about 2–3 inches (about 2 cups for a small pot). Heat oil to 325°F (160°C) for the first blanch/fry. If you don't have a thermometer, heat until a small piece of potato sizzles gently.

First fry (blanch)

Working in small batches, fry the dried potatoes for 4–5 minutes until cooked through but not browned. They should be limp and pale. Remove with a slotted spoon or spider and drain on a rack or paper towels. Let cool for 5–10 minutes. This step can be done ahead and refrigerated.

Second fry (crisp)

Increase oil temperature to 375°F (190°C). Fry the blanched fries in batches for 2–3 minutes until golden brown and crisp. Remove and drain on paper towels and immediately season with kosher salt and black pepper while hot.

Preheat oven to melt cheese

Preheat oven to 425°F (220°C) or set broiler to medium-high if you prefer broiling. Prepare a rimmed baking sheet lined with foil or parchment for easy cleanup, or use an ovenproof skillet.

Assemble fries with cheeses

Arrange the hot fries in an even layer on the prepared baking sheet or in a large ovenproof skillet. Distribute shredded cheddar and Monterey Jack evenly over the fries. Use the full cup of each cheese so melting covers the fries well.

Melt cheeses

Place the fries under the preheated oven or broiler just until the cheese is fully melted and bubbly — about 3–6 minutes under the broiler (watch carefully to avoid burning) or 6–8 minutes at 425°F. Remove when cheese is melted and beginning to brown at the edges.

Add bacon & banana peppers

Immediately after removing from the oven, sprinkle the chopped crisp bacon and drained sliced banana peppers evenly over the melted cheese so they adhere. Scatter sliced green onions and chopped parsley on top.

Optional Dips & Finishes

Serve the cheese fries hot with sour cream or ranch on the side for dipping. Offer hot sauce on the side to add heat to taste. If desired, provide extra salt, pepper, or chopped fresh herbs at the table.
