Prepare meat

Pat the alligator meat dry with paper towels. Cut into 1/2-inch pieces or thin strips for quick, even cooking. Season lightly with 1/2 teaspoon kosher salt and 1/4 teaspoon black pepper.

Brown aromatics

Heat a large skillet over medium-high heat. Add 2 tablespoons olive oil and 1 tablespoon butter. When shimmering, add the minced garlic, diced onion, and diced celery. Sauté until the onion is translucent and celery is softened, about 3–4 minutes.

Cook alligator

Increase heat to medium-high. Add the cut alligator pieces in a single layer (work in batches if needed) and sear without stirring for 1–2 minutes to get color. Continue cooking and stirring until the meat is opaque and cooked through, about 4–6 minutes total depending on piece size. Alligator should be firm and cooked through, similar to chicken.

Build buffalo sauce

Push the cooked meat and aromatics to one side of the skillet. Add the hot sauce (1/4 cup), Worcestershire (1 tsp), smoked paprika (1 tsp), and the remaining 1/2 teaspoon kosher salt and 1/4 teaspoon black pepper. Stir to combine. If you want a richer, slightly nutty note, stir in 1 teaspoon brown butter-hot sauce mix now. Add 1 tablespoon lemon juice and 1/4 cup hot chicken stock or water to deglaze the pan, scraping up browned bits. Simmer for 1–2 minutes until sauce is glossy and coats the meat.

Adjust seasoning

Taste and adjust heat or salt. If sauce is too spicy, stir in an extra 1 tablespoon butter or 1 tablespoon honey to mellow. Keep warm on very low heat while you finish other components.

Make slaw dressing

In a bowl, whisk together 1/2 cup mayonnaise, 1/4 cup Greek yogurt, 1 teaspoon apple cider vinegar, 1 teaspoon honey, 1 teaspoon hot sauce, 1/2 teaspoon salt, and 1/4 teaspoon black pepper until smooth.

Toss slaw

Combine the shredded green cabbage (2 cups), red cabbage (1 cup), shredded carrot (1/2 cup), and sliced green onions (2 tbsp) in a large bowl. Pour the dressing over the vegetables and toss until evenly coated. Let sit 10–15 minutes to soften slightly and allow flavors to marry. Refrigerate if making ahead.

In a small heatproof bowl or jar, combine 1/4 cup apple cider vinegar, 1/4 cup water, 1 teaspoon sugar, and 1/4 teaspoon kosher salt. Stir until sugar and salt dissolve. Add the thinly sliced red onion (1/2 cup), press down to submerge, and let sit at room temperature for at least 10 minutes (longer for milder onions). Refrigerate if holding longer than 1 hour.

Chop 2 tablespoons fresh cilantro and cut limes into wedges for serving.

Warm tortillas

Heat a clean skillet over medium heat. Lightly brush each tortilla with a small amount of cooking oil (about 1 tsp total across tortillas) and warm 30–45 seconds per side until pliable and slightly toasted. Alternatively, wrap tortillas in foil and warm in a 350°F (175°C) oven for 8–10 minutes. Brush with 1 teaspoon melted butter after warming if desired.

Assemble tacos

Place a warmed tortilla on a plate. Spoon about 2 ounces (1/8 of the cooked filling) of buffalo alligator down the center. Top with a generous 2–3 tablespoons of the prepared slaw, a few pickled onion slices, and about 1–2 tablespoons of blue cheese crumbles (or shredded Monterey Jack). Sprinkle with chopped cilantro and finish with a squeeze of lime.
