Fries

Method

Fries

  1. 1

    Preheat and prepare

Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or foil and arrange a wire rack on top if available for extra crispness.

  2. 2

Spread the frozen waffle fries in a single layer on the prepared sheet. If desired, toss the fries lightly with 1 tablespoon vegetable oil to promote even browning.

  3. 3

Season lightly with 1/2 tsp salt and 1/4 tsp black pepper.

  4. 4

Bake according to package directions for crispy fries, typically 18–22 minutes, flipping once halfway through. If using a convection oven, check at 12–16 minutes. Fries should be golden brown and crisp.

  5. 5

Once crisp, transfer fries to a serving plate or shallow oven-safe dish, leaving oven on (or set to low to keep warm).

Cheese Sauce

  1. 6

    Make a roux

While the fries bake or in a small saucepan over medium heat, melt 1 tablespoon unsalted butter until foaming but not browned.

  2. 7

Add 1 tablespoon all-purpose flour to the melted butter and whisk continuously for 45–60 seconds to cook the raw flour taste, forming a blond roux.

  3. 8

    Add milk and thicken

Gradually whisk in 3/4 cup whole milk, bringing the mixture to a gentle simmer. Continue whisking until the sauce thickens slightly, about 1–2 minutes.

  4. 9

    Incorporate cheeses and seasonings

Lower heat to low. Remove the pan from direct heat and stir in 1 cup shredded sharp cheddar and 1 ounce softened cream cheese a small amount at a time until melted and smooth. Stir in 1/4 tsp Dijon mustard, 1/8 tsp Worcestershire sauce, 1/4 tsp kosher salt, and 1/8 tsp freshly ground black pepper. Taste and adjust seasoning as needed. Keep warm on lowest heat or transfer to a small insulated container.

  5. 10

If sauce becomes too thick, thin with up to 1–2 tablespoons additional milk, stirring until desired pourable consistency is reached.

Assembly & Garnish

  1. 11

Pour or spoon the warm cheese sauce evenly over the hot waffle fries, covering them but leaving some ridges visible for texture.

  2. 12

Sprinkle the chopped crispy bacon (if using) and sliced pickled jalapeños (if using) over the sauced fries.

  3. 13

Finish with the thinly sliced green onions scattered across the top.

  4. 14

Serve immediately while fries are hot and cheese sauce is gooey. Provide napkins and a fork for easy eating.
