    Prepare mozzarella

    Drain the fresh mozzarella balls and pat them dry with paper towels. Using your fingers, gently squeeze each ball to remove excess moisture but keep the shape intact.

    Mix filling

    In a medium bowl, combine the softened cream cheese, grated Parmesan, chopped basil, lemon zest, minced garlic, salt, and black pepper. Mix until well blended and smooth. Taste and adjust seasoning as needed.

    Assemble logs

    Take one mozzarella ball and flatten gently in your palm. Spread about 1 to 1 1/2 tablespoons of the cream cheese mixture on top, then roll the mozzarella between your palms into a longer log shape (about 2 1/2–3 inches long). Alternatively, you can slice a slit in each ball and stuff with the mixture and press closed. Repeat with all balls. Place assembled logs on a parchment-lined tray and chill in the refrigerator for at least 20 minutes to firm up (this helps if frying).

    Set up breading station

    Place the flour in a shallow dish. In a second shallow dish, whisk the eggs with 2 teaspoons water until smooth. In a third shallow dish, combine breadcrumbs and Italian seasoning.

    Bread the logs

    Working with chilled logs one at a time, roll each log in flour, shaking off excess, then dip into the egg wash, and press into the breadcrumbs to coat completely. For extra-crispy, repeat the egg and breadcrumb step for a double coat. Place breaded logs onto a tray and chill 10 minutes to set the coating.

    Fry the logs

    Pour enough vegetable oil into a skillet to reach about 1/3 inch depth and heat over medium heat until it reaches 350°F (175°C) or a small breadcrumb sizzles and browns in about 15 seconds. Fry the logs in batches, 1–2 minutes per side, turning gently, until golden brown. Do not overcrowd the pan. Transfer to a wire rack or paper towel–lined plate to drain. Let rest 1–2 minutes before serving so the cheese stabilizes.

    Alternative: Baked option

    For a lighter version, place breaded logs on a parchment-lined baking sheet, spray lightly with oil, and bake in a preheated 400°F (200°C) oven for 10–12 minutes until golden, flipping halfway through.

Dipping Sauce

    Warm the marinara sauce in a small saucepan over low heat until simmering. Stir in red pepper flakes if using. Spoon into a small bowl for serving.
