    Cut the alligator tail meat into bite-size pieces (about 1 to 1 1/4-inch cubes). Pat dry with paper towels. In a bowl, whisk together buttermilk, hot sauce, Worcestershire sauce, kosher salt, and black pepper. Add the alligator pieces, making sure they are fully submerged. Cover and refrigerate for 2 to 4 hours (or up to overnight) to tenderize and flavor the meat.

    Make coating mix

    In a shallow bowl or rimmed baking dish, combine the flour, cornmeal, garlic powder, onion powder, paprika, cayenne, celery salt, black pepper, and kosher salt. Whisk thoroughly to distribute the spices evenly. Keep the mixture near the frying station.

    Dredge

    Remove the marinated alligator from the refrigerator. Working in small batches, remove pieces from the buttermilk and allow excess to drip off. Dredge the pieces thoroughly in the dry coating, pressing lightly so the mixture adheres. Shake off excess and place on a wire rack set over a baking sheet. Let coated pieces rest 10 minutes to help the crust set.

    Heat oil

    Pour oil into a heavy Dutch oven or deep skillet to a depth of about 1 1/2 inches (roughly 1 to 1.5 cups depending on pan). Heat over medium-high until a thermometer reads 350°F (175°C). If you don't have a thermometer, test with a small pinch of coating— it should sizzle and brown in about 45–60 seconds.

    Fry in batches

    Carefully add a single layer of coated alligator pieces to the hot oil, avoiding overcrowding. Fry for 3 to 4 minutes, turning once with tongs or a slotted spoon, until golden brown and an instant-read thermometer inserted into the thickest piece registers 145–150°F. Smaller pieces may take 2.5–3 minutes; larger up to 4–5 minutes. Maintain oil temperature at 325–350°F by adjusting the heat between batches.

    Drain and finish

    Remove fried pieces to a wire rack or paper towel-lined tray. While still hot, optionally toss with the tablespoon of melted butter for sheen and flavor, then sprinkle with chopped parsley and a light squeeze of lemon to taste. Keep warm in a 200°F oven for up to 15 minutes if needed while frying remaining batches.

    While alligator is marinating or frying, whisk together mayonnaise, Creole mustard, horseradish, sweet pickle relish, hot sauce, Worcestershire sauce, paprika, lemon juice, kosher salt, and black pepper until smooth. Taste and adjust seasoning—add more hot sauce for heat or lemon for brightness. Chill until ready to serve.
