Prep dates and filling
Preheat oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper or foil and place a wire rack on top if available. Pat the pitted Medjool dates dry with a paper towel. If dates are not pitted, make a lengthwise slit and remove the pit.

Stuff with almond or cheese
For a crunchy center: insert one toasted almond into each date. For a creamier version: use about 1/2 teaspoon of soft goat cheese per date and gently press the cheese into the cavity. You can also do half almond/half cheese for variety. Ensure each date is filled but not overstuffed so it closes reasonably well.

Wrap with bacon
Cut bacon slices in half crosswise if not already halved. Wrap each stuffed date with one half slice of bacon, tucking the ends under the date so it holds together. Secure each wrapped date with a toothpick or small skewer inserted through the center.

Arrange for baking
Place the wrapped dates seam-side down on the prepared rack or directly on the lined baking sheet, leaving about 1/2 inch between them for even browning.

Make glaze
In a small bowl whisk together 3 tablespoons pure maple syrup, 1 teaspoon balsamic vinegar, and 1 teaspoon olive oil until combined. Reserve about 1 tablespoon of glaze for serving if desired.

Bake and baste
Brush or drizzle half of the glaze over the bacon-wrapped dates. Bake in the preheated oven for 12 minutes, then remove and use tongs or a brush to turn each date and brush with more glaze. Continue baking for another 6-8 minutes until bacon is crisp at the edges and caramelized but not burnt. Total baking time ~18-20 minutes depending on bacon thickness.

Finish
Remove from oven and transfer to a serving platter. Sprinkle with flaky sea salt (about 1/4 tsp across the batch) and freshly ground black pepper (about 1/2 tsp). Garnish with finely chopped fresh rosemary (about 1 tablespoon) and drizzle the reserved glaze over the top if you set some aside.

Serve warm or at mild room temperature as a starter. Provide extra toothpicks for guests. These are best eaten within 1 hour of baking for maximum contrast between crisp bacon and soft date.
