Soften then scoop
If your ice cream is very hard, leave it at room temperature for 5–10 minutes so it’s scoopable but still cold. Portion into 4 generous scoops (about 3 cups total) and return to the freezer until ready to assemble.
Warm Chocolate Chip Cookies

Preheat and prepare
Preheat the oven to 350°F (175°C). Line a small baking sheet with parchment paper or a silicone mat.

Mix wet ingredients
In a small bowl, cream together the softened butter, granulated sugar and brown sugar until smooth and pale, about 1–2 minutes. Stir in the egg yolk and vanilla extract until fully combined.

Combine dry and wet
In a separate bowl, whisk the flour, cornstarch, baking soda and salt. Add the dry mixture to the wet mixture and stir until just combined. Fold in the chocolate chips.

Portion and bake
Form two to four slightly flattened cookie portions (depending on desired size) — about 2 to 3 tablespoons of dough each — and place on the prepared baking sheet spaced 2 inches apart. Bake for 8–10 minutes, until edges are set and centers look slightly underbaked for a soft cookie. Remove from oven and let rest on the sheet for 2 minutes, then transfer to a wire rack for 1–2 minutes to cool slightly. Cookies should remain warm when assembling the sundaes.

Warm sauces
Warm the hot fudge sauce gently in the microwave (20–30 second bursts, stirring between) or in a small saucepan over low heat until pourable but not boiling. If using caramel, warm slightly as well.

Assemble the WO-Cookie Sundae
Place one warm cookie in each serving bowl or glass. Top each cookie with two scoops of prepared vanilla ice cream (reserve remaining scoop(s) for extra). Spoon generous amounts of warm hot fudge over the ice cream so it drips onto the cookie. Drizzle with caramel if using. Sprinkle toasted chopped nuts over the top, add a dollop of whipped cream, finish with a maraschino cherry and a light pinch of sea salt if desired.

Serve immediately while cookies and sauce are warm so you get the hot-and-cold contrast. Provide spoons and enjoy.
