In a heavy-bottomed skillet or medium saucepan over medium heat, melt 4 tbs unsalted butter until foamy. Add the diced onion, celery, and bell pepper (the classic Cajun 'holy trinity'). Sauté, stirring occasionally, until the vegetables are softened and translucent, about 6–8 minutes.

Make a blond roux
Push the vegetables to one side, or lower the heat slightly. Sprinkle 4 tbs all-purpose flour over the vegetables and stir constantly to combine. Cook the flour with the butter and vegetables, stirring frequently, until the roux turns a light golden (blond) color and loses its raw flour taste, about 3–5 minutes. Do not let it darken too much—étouffée typically uses a light to medium roux.

Gradually whisk in 2 cups low-sodium chicken stock, adding a small amount at a time to prevent lumps. Once incorporated, bring the mixture to a gentle simmer.

Stir in 1 tbs tomato paste, 1 tsp Worcestershire sauce, 1 tsp hot sauce, 1 tsp Creole or Cajun seasoning, 1 tsp kosher salt, and 1 tsp freshly ground black pepper. If using smoked paprika, add 1/2 tsp now. Simmer the sauce gently for 8–10 minutes so flavors meld and the sauce thickens to a saucy, gravy-like consistency. Taste and adjust salt, pepper, or hot sauce as needed.
Seafood & Finish

Stir in the crawfish tails and reduce heat to low. Simmer just until the crawfish are heated through and opaque, about 3–5 minutes (avoid long simmering, which toughens seafood).

Remove from heat. Stir in 1 tbs fresh lemon juice, 1 tbs unsalted butter (optional, for a silkier finish), half of the chopped parsley, and half of the sliced green onions. Adjust seasoning one more time.

To serve, spoon 1/2 to 3/4 cup warm cooked rice into bowls or cups. Ladle the crawfish étouffée over the rice. Garnish with the remaining parsley and green onions.

Serve immediately with extra hot sauce or crusty bread if desired.
