Prepare the mozzarella

Drain the fresh mozzarella and pat dry with paper towels. Cut the 16 oz ball (or balls) into 8 equal logs (about 1 inch x 1 inch x 3 inches each). If using pre-packaged block mozzarella, cut into 8 similar-sized sticks. Place assembled sticks on a parchment-lined tray and chill in the refrigerator for at least 20 minutes — chilling firms the cheese and helps prevent melting during frying.

Set up breading stations

Line three shallow bowls or rimmed plates: one with 1 cup all-purpose flour; one with the two large eggs whisked together with 2 tablespoons cold water and a pinch of salt (this is the egg wash); and one with the breadcrumb mixture (combine 1.5 cups fine breadcrumbs, 0.5 cup panko, 1/4 cup grated Parmesan, 1 tsp Italian seasoning, 1/2 tsp garlic powder, 1 tsp kosher salt, and 1/2 tsp black pepper). Mix the dry breadcrumbs evenly so the Parmesan and seasonings are distributed.

First coat - flour

Working with one log at a time, roll a chilled mozzarella stick in the flour, tapping off excess. Make sure all surfaces are lightly coated — this helps the egg adhere.

Second coat - egg

Dip the floured stick into the egg wash, fully coating it and allowing excess to drip back into the bowl.

Third coat - breadcrumbs

Press the egg-coated stick into the breadcrumb mixture, turning to coat all sides and pressing gently so crumbs adhere. For a thicker, extra-crispy coating, return the coated stick to the egg wash briefly and then re-dredge in breadcrumbs to double-coat. Place coated sticks on a parchment-lined tray and transfer to the freezer for 20–30 minutes; freezing prevents cheese from oozing out when frying.

Heat the oil

Pour about 3–4 cups neutral oil into a deep, heavy-bottomed pot or Dutch oven so the oil depth is at least 2 inches. Heat over medium-high until the oil reaches 350°F (175°C) on a thermometer. If you don't have a thermometer, test by dropping a small breadcrumb piece into the oil—if it sizzles and browns within about 30 seconds, oil is ready. Reduce heat slightly if oil gets too hot; maintain 340–360°F while frying.

Fry the logs

Fry the frozen-coated mozzarella sticks in small batches (3–4 at a time) so they don't touch and so oil temperature remains steady. Gently lower sticks into hot oil using a slotted spoon or spider. Fry 45–75 seconds per batch, turning once, until coating is golden brown. Do not over-fry; long exposure will cause the cheese to burst out. Remove to a paper towel–lined baking sheet to drain. Keep warm in a 200°F (95°C) oven if frying multiple batches.

Finish and serve

After frying all batches, let the sticks rest 1–2 minutes (they will be very hot inside). Transfer to a serving platter and sprinkle a pinch of flaky salt or extra grated Parmesan if desired. Serve immediately with warm marinara or your preferred dipping sauce.

Optional Dipping Sauce

Warm 1 cup marinara sauce in a small saucepan over low heat, stirring occasionally, for 3–5 minutes until heated through. Stir in sliced basil and a pinch (about 1/4 tsp) crushed red pepper flakes for a touch of heat. Spoon into a small bowl for serving alongside the mozzarella logs.
