Method
Salmon & Glaze
Prepare salmon
Pat salmon fillets dry with paper towels. Season both sides with 1 tsp salt, 1 tsp black pepper and 1 tsp smoked paprika. Drizzle 2 tbs olive oil over fillets and rub to coat evenly. Let sit at room temperature 10 minutes while you prepare other components.
Make glaze
In a small saucepan or microwave-safe bowl combine 4 tbs hot honey, 1 tbs soy sauce, 1 tbs fresh lime juice and 1 tsp minced garlic. Warm gently over low heat for 1–2 minutes until slightly thinned and combined; do not boil. Taste and adjust heat/sweetness as desired.
Grill or pan-sear
Preheat grill to medium-high (about 400°F / 200°C) or heat a large heavy skillet over medium-high heat. If grilling, oil the grates. Place salmon skin-side down and cook 4–5 minutes without moving until skin is crisp and salmon releases easily. Flip and cook 2–4 minutes more depending on thickness, until salmon is about 85% done (internal temp ~120–125°F / 49–52°C). In last 1–2 minutes brush generously with hot-honey glaze and let it set.
Finish
Remove salmon from heat and brush another light coat of glaze. Let rest 2–3 minutes; residual heat will finish cooking to medium (125–130°F / 52–54°C).
Mango Salsa
While salmon rests, combine diced mango, diced red bell pepper, 1/4 cup finely diced red onion, minced jalapeño, and 1/4 cup chopped cilantro in a bowl. Add 2 tbs fresh lime juice, 1 tsp honey, 1/2 tsp salt and 1/4 tsp black pepper. Stir gently to combine. Taste and adjust seasoning or lime/honey balance. Let sit 5–10 minutes to meld flavors.
Broccoli & Finish
Cook broccoli
Toss 4 cups broccoli florets with 1 tbs olive oil, 1/2 tsp salt and 1/4 tsp black pepper. Roast on a baking sheet in a 425°F (220°C) oven for 12–15 minutes until tender and lightly charred, or sauté in a hot skillet for 6–8 minutes until crisp-tender with a few browned edges.
Plate and serve
Divide broccoli among four plates. Place a glazed salmon fillet atop each bed of broccoli. Spoon a generous 2–3 tbs of mango salsa over each salmon fillet. Serve immediately with lime wedges on the side for extra brightness.
