Activate yeast and combine liquids

In a small bowl, stir the warm water (75–95°F / 24–35°C) with 1 tsp of the granulated sugar and the instant dry yeast. Let sit 5–7 minutes until foamy. In a separate measuring cup, whisk together warm milk, melted butter, egg, the remaining sugar, and vanilla extract until homogeneous.

Mix dry ingredients

In the bowl of a stand mixer fitted with the dough hook (or a large mixing bowl if mixing by hand), combine the all-purpose flour and 1/2 tsp salt. Mix briefly to distribute.

Form the dough

With the mixer on low, pour in the yeast mixture and then the milk-egg mixture. Mix until ingredients come together into a soft, slightly sticky dough, about 3–4 minutes. If dough is too sticky to handle, add up to 2 additional tablespoons of flour, 1 tablespoon at a time. If too stiff, add 1 teaspoon warm water.

First rise

Transfer the dough to a lightly oiled bowl, turn to coat, cover tightly with plastic wrap or a damp towel, and let rise in a warm draft-free place until doubled in size, about 1 to 1¼ hours.

After the first rise, gently deflate the dough and cover. Refrigerate for 30–60 minutes; chilling firms the dough slightly and makes it easier to cut into uniform bites. If short on time, proceed without chilling.

Cut into bites

Turn the dough out onto a lightly floured surface. Pat or roll the dough to about 1/4 to 1/2 inch (6–12 mm) thickness. Using a 1 to 1 1/2-inch round cutter or a knife, cut into bite-sized pieces (about 36–48 pieces depending on size). Place cut pieces on a lightly floured tray, cover loosely while you heat the oil.

Heat oil

Pour vegetable oil into a deep, heavy pot or Dutch oven to a depth of about 2–3 inches (enough to float the beignet bites). Heat oil over medium heat to 350°F (175°C). If you don't have a thermometer, test by dropping a small piece of dough: it should sizzle and rise to the surface within a few seconds and turn golden in 45–60 seconds.

Fry beignet bites

Fry the dough pieces in small batches (6–8 pieces depending on pot size) so they have room to float and cook evenly. Use a slotted spoon or spider to carefully lower pieces into the hot oil. Fry, turning once, until golden brown on both sides, about 1 to 1½ minutes per side (total 2–3 minutes). Avoid overcrowding which lowers oil temperature.

Drain

Use a slotted spoon to transfer fried beignet bites to a wire rack set over a baking sheet or paper towels to drain excess oil. Let rest for 1–2 minutes to stop cooking and to allow excess oil to drip away.

Dust with powdered sugar

While still slightly warm, transfer bites to a large bowl or place on a tray and dust generously with confectioners' sugar. For a spiced version, sift together the powdered sugar and ground cinnamon before dusting. Shake off excess sugar and transfer to a serving platter.

Serve

Serve beignet bites warm with optional dipping sauces such as chocolate sauce or fruit jam. If not serving immediately, reheat briefly in a 325°F (160°C) oven for 3–5 minutes to refresh before dusting with more powdered sugar.
